Preview: Kid is assigned a project to pick a foreign country to compare and contrast various elements i.e; holidays, food, customs, etc.



Highlight: My little genius picks Canada.



Problem: Mom's portion of the project (and why the Frost am I getting homework anyways?) is to cook a dish "unique: to the country my child picked. Candadian bacon has already been nixed.



I implore all Canadian GABbers to help me out here. Its due tommorow so I cant order some Tim Horton's and I can't give 6th graders Windsor Canadian Whiskey(again)

Some stores have cheese curds, not all do, though.



Another Canadian thing though, is shortbread cookies, and they are even easier than poutine.



I have a great shortbread cookie recipe.

Some of the original Indian recipes were roast polar bear, boiled reindeer, moose meat soup, sweet pickled beaver, squirrel fricassee, fried woodchuck.



I can just see my poor kid standing up in front of the class...

Homemade Shortbread cookies



10x15 pan

250 F



1 cup (two sticks) REAL butter

at room temperature. Not cold, not melted.



(If you are going to use a cheap and nasty imitation, just go get a pack of Lorna Doones).



Unsalted preferred, but lightly salted will do.





1 cup light brown sugar, firmly packed.



Combine butter and sugar in mixing bowl. If using standing mixer, use the Flat Beater. Sugar and butter should be VERY well combined. At least 5 minutes.



(Optional)- 1 teaspoon vanilla extract. Add if now using.



2 1/2 cups all purpose flour, measured by the stir (in the container) spoon (into measuring cups), and sweep (with a straight edge, so it is level) method.



Add to the butter/sugar/(vanilla) mixture, and mix to just combine. If using a low powered hand mixer, you may have to switch to a wooden spoon.



Dump dough onto clean 10x15 pan. Dough will be crumbly. Press gently but firmly into a uniform thickness. To make them look authentic, prick the top of the dough with a fork. Then, score the dough with a sharp knife before putting them into the oven. This is the longest part of the active course of the recipe.

Patting the dough is the slowest part of the recipe.



Bake in preheated 250F oven on middle rack position for 35-40 minutes. Cookie should be firm but not hard when pressed lightly. "squidgy firm."



Remove to rack and let cool. About five minutes into cooling, run knife again through the scores. Break into portions when fully cool.



Makes enough for one average class, if cut into 1 x 2 inch pieces.

On my two trips to Canada I became an expert at making Caesars.



I made a shepard's pie for dinner last night and used venison instead of ground beef.



Do they eat alot of venison up yonder?

Not a lot of venison, we do eat a lot of BEEF up here in Canada ever since a certain neighbour to the south closed there border to our cattle.

I did that to my kids initially. I didn't tell them they were eating venison until after they loved it.



Buffalo however, was a little different. We went to a buffallo farm, rode the hayride out into their grazing area, listened to the guide tell us all about their tragic history and how they were almost extinct blah, blah.



Then we rode back to the snack bar and had buffalo burgers and buffalo chili.

It's probably too late, but here is Canadian cuisine in a nutshell. CBC's archives site oozes awesomeness. Colonel Sanders' thorough trashing of Canadian cuisine is worth a listen.



One thing they fail to mention is Nanaimo bars, a personal favourite. My brother was born in Nanaimo, BC.
